To traditionalists in Hutchinson County, S.D., chislic typically means one thing: mutton or lamb skewers, deep-fried for less than a minute, then dusted with garlic salt and served with Saltine crackers. But the popular meat snack, named South Dakota's "state nosh" in 2018, is evolving. Many bars and restaurants skip the fryer and skewers, browning loose cubes of lamb, beef, pork and other proteins on a flat-top.

Some add signature seasonings and sides of barbecue sauce and ranch.
